I wish that I could take complete credit for these cookies, but unfortunately I cannot. Blogilates is the reason that I got hold of the basic recipe, which I then adapted to make these little lovelies, and also my prune and walnut cookies (http://ecstaticallyem.blogspot.co.uk/2015/03/microwave-prune-walnut-cookies.html). Now, to these cookies, which are half of the normal quantity (so that I can eat them all), and can be packed up to take into school/uni/work for a delicious snack. As a student I could no longer afford to buy my fruit and nut bars every day (it's become a bit of an addiction), and so I turned to these. Which happen to be just as good (if not better), a hell of a lot cheaper, vegan friendly, took just minutes to make- and even less to eat.
Ingredients
- 1/4 cup porridge oats
- 1/2 ripe small banana (you know the drill guys; if it doesn't have brown freckles don't use it)
- Pinch of cinnamon
- 1/2 tbsp. smooth, or crunchy, peanut butter (I use Whole Earth no added sugar)
Method
- In a dish mash up the banana, leaving a few chunks in there for texture. Stir the cinnamon in as well, before adding the peanut butter and mixing until well incorporated (don't worry if this takes some time; you can heat the peanut butter slightly to make it a little easier, but it does work with persistence)
- Add the oats to the banana mix and stir until it starts to pull together. Once you reach this stage divide the 'dough' into 2-3 pieces, and use your hands to form cookie balls. Flatten them until they're the size you desire, and then place onto a microwavable plate.
- Throw the plate into the microwave for 1 minute, before using a butter knife (like a mini palette knife, for mini cookies), to flip them over. Return to the microwave for 30 seconds-1 minute.
- Either chow down on your delectable, homemade, healthy cookies- or leave them to cool slightly before wrapping up (in foil) and packing up for a tasty snack later on.
