I know the connotations of prunes, okay? They're what your elderly relative with no teeth eats. Surely they aren't meant for young, healthy go-getters like you? But they are. I use prunes in many recipes, simply because they are easy to store, relatively cheap, and not as sweet and sugary tasting as dates. If you wish to change these into date and walnut cookies feel free, but I am a prune advocate. Just try them in these and see.
The cookies that you see are quick, healthy, all natural, perfectly soft, can be prepared with just a bowl, knife, plate, fork, and microwave- plus use basic ingredients you probably have in you kitchen right now. Therefore they make the perfect cookie for a healthy student, living on a budget, with no time for baking, and no money to buy cookies. I love these as an evening snack with a cup of tea, or even pre workout for a little energy lift.

Ingredients
- 1/4 cup porridge oats
- 1/2 banana (make sure it's ripe guys- I'm talking brown freckles ripe!)
- Splash of vanilla essence/flavouring
- 2 prunes
- 1-2 walnuts
- Cinnamon, to taste
Method
- Mash the banana in a dish until smooth, then add the oats and cinnamon before stirring to combine.
- Add a splash of vanilla essence/flavouring, and mix well.
- Roughly chop the prunes and walnuts, then fold into the mixture.
- Bring the oat mix together in the bowl, and divide into two or three - this depends on how large you want your cookies. Don't worry it it's quite sticky, just do your best to create cookie shapes, and place them onto a microwavable plate.
- Throw (not literally) this plate into the microwave, and cook on full power for one minute (I have an 800W microwave), before using a butter knife to flip the cookies over, and return to the microwave for around 30 seconds more. If you're using a microwave of different wattage then just remove the cookies from the microwave once they're holding their shape, having puffed up; they shouldn't fall apart when you pick them up, and should be close to set when you flip them over.
- Remove from the microwave and transfer to another plate so that they can cool slightly- just enough so that you can pick them up, because these are delicious warm...
